8'000 bottles (in 2016 we produced 15'000 bottles)
Harvest
By hand, early in the morning, in 9 kg crates. The grapes are immediately taken to the cellar where they are de-stemmed and sorted by hand. By gravity, the wine is lowered into the stainless steel tanks for fermentation.
Vinification
Indigenous yeasts! No intervention other than punching down and pumping over until the end of fermentation. After pressing, the musts remain in stainless steel tanks until their malolactic fermentation.
Soil
Crushed slate. Some plots are terraced on palisades, others are in goblet shape on the hillside. The vines are situated between 250 and 400 metres above sea level.
