The wines> Planassos
Born in the crater of Planassos where the temperatures in July are infernal, this wine has the temperament of its origins: powerful and solar. Its almost crimson colour leads us to believe that this is a great wine, its nose, its entry into the mouth and above all its length in the mouth quickly reassure us.

Harvest
This is the first plot of the estate to be harvested. By hand, early in the morning, in 9 kg boxes. The grapes are immediately taken to the cellar, where they are sorted grain by grain.
Vinification
The whole grains are pre-macerated in the cold for two days. Fermentation and maceration will take place at a temperature not exceeding 28 degrees. We use indigenous yeasts! The must remains in 500 litre stainless steel tanks until malolactic fermentation and then goes into selected barrels.
