Grenache noir, young vines, short maceration before pressing

Grenache grapes are harvested as early as possible, as soon as the crunchy seeds taste like roasted hazelnuts. For the moment, to complete our needs, we buy grapes from the same producer since the beginning who works his vines with the same specifications as ours, but our objective is to vinify only our own production within three years.

Three to six months in stainless steel tanks to complete malolactic fermentation.

Production

5 to 6'000 bottles depending on the vintage

Harvest

By hand, early in the morning, in 9 kg boxes. The grapes are immediately taken to the cellar where they are de-stemmed. By gravity, the wine is lowered into the stainless steel tanks for fermentation.

Vinification

12 days of maceration. The juice is then pressed and left to ferment in stainless steel tanks until it is bottled in March.

Soil

Crushed slate. Some plots are terraced on palisades, others are in goblet shape on the hillside. The vines are situated between 250 and 400 metres above sea level.
